Delft Aged Bleu

Creamy, custardy, butterscotchy — we’ve aged these wheels for 2 years and it’s taking everything we’ve got to not keep them for ourselves. Pockets of caramel-y bleu provide a complementary crunch to whatever you elect to pair with this (arguably) perfect cheese. Our mongers like to crumble her over ice cream but she’s great for dessert any time of day — alongside chocolate, nuts, jams, but mostly, simply allowed to warm to room temperature, plucked in tender, bleu-veined clumps and popped greedily into the waiting mouths lucky enough to taste her at this ripe old age.
